Meatloaf-Healthy

Meatloaf –the Healthy version

1 lb 93% lean ground beef

1 TBL Olive Oil

½ onion, chopped

½ green bell pepper chopped

1 egg

2 garlic cloves

½ Cup Sugar free ketchup, additional ¼ cup to spread on top after cooking

½ Cup almond flour

½ Cup flax seed

1 tsp salt

1 TBL Worcester sauce


Instructions

1. Heat olive oil in skillet over medium heat

2. Cook onions and peppers for about 4 minutes until softened, add garlic and cook 1 additional minute

3. Put onion, pepper, garlic mixture in bottom of mixing bowl

4. Add ground beef, almond flour, flax seed, salt ketchup, egg, and Worcester sauce.

5. Fold to combine

6. Spray cooking spray onto loaf pan or cookie sheet

7. Heat oven to 375 and cook for 45 minutes


Top with ¼ cup of sugar free ketchup


KFC Knockoff slaw--Healthy

KFC slaw knockoff—Healthy version


1 1-pound bag of slaw mix


1 TBL minced onion

2 TBL Splenda or monk fruit sweetener

½ cup Lite Mayo

2 TBL Buttermilk

2 TBL Almond milk (unsweetened)

1 TBL Lemon Juice

1 TBL White vinegar

½ tsp salt

½ tsp pepper


Instructions

1. Put bag contents in a bowl. To get a true KFC-type slaw, put in food processor and chop to a finer consistency

2. Add all ingredients and then stir well.

3. Chill and let marinade for at least 30 minutes before serving. Preferably overnight if possible.



Shrimp Scampi-Healthy

Shrimp scampi


Ingredients


1 TBL Butter

1 TBL Olive oil

1 shallot finely chopped

3 scallions chopped

4 cloves of garlic minced

1 pound large raw shrimp with shell on

1 tsp Morton low sodium salt

½ tsp black pepper

½ tsp red pepper flakes (optional)

¼ cup chicken broth or shrimp broth (made from the shells of shrimp and water)

Zest of half a lemon

Juice of one lemon

1-1/2 pounds of zucchini noodles spiralized

¼ cup fresh parsley leaves

2 TBL Parmesan cheese



Directions:


1. Take shells off shrimp and put in sauce pan with 1/3 cup water

2. Add butter and olive oil into skillet over medium heat

3. Add chopped shallot and scallions. Cook for 3 minutes

4. Add garlic cook for 1 minute

5. Add salt, black pepper, red pepper flakes

6. Add shrimp cook for 3 minutes

7. Add broth, lemon zest, bring to a boil and cook for 1 minute until shrimp is opaque

8. Add zoodles and parsley. Heat until warmed through. Do not overcook or zoodles with over cook.

9. Sprinkle with Parmesan cheese and serve.
